How to recruit international chefs — fairly

A practical guide for hotels, resorts, restaurants, contractors and private households hiring chefs from abroad, from a chef who has recruited and led teams of seven or more nationalities.

01

Start with an honest brief

Describe the role, the pay, the hours, the housing and the conditions truthfully. Candidates who know what they are coming to stay longer.

02

Assess cooking skills, not just CVs

  • Review CV, certificates and work history
  • Practical video interviews on hygiene, HACCP and high-volume production
  • Reference checks with previous employers
  • A trial-shift assessment where possible

03

Recruit ethically

  • Candidates never pay a recruitment fee — the employer pays
  • A written contract before travel, in a language the employee understands
  • The employee keeps their own passport
  • Outside the EU, use only licensed agencies in the candidate's home country

04

Follow up after arrival

The first weeks decide whether a hire works. Check in early, listen to both sides, and agree a replacement plan in advance.
